Distillery Information
Domaine Pattes Loup is a certified organic wine estate in Chablis. It was founded by Thomas Pico in 2005 in the village of Courgis, about three kilometers (two miles) south west of the town of Chablis. The wines are acclaimed for their depth of flavor and briny minerality. Thomas inherited 2.4 hectares of vines from his grandfather and was given another eight hectares by his father. He was highly motivated to build on this start, make his mark and take a qualitative leap forward, immediately beginning a program of strict yield restriction. He also started the process of converting the management of his vineyards to organic and biodynamic viticulture. This is rare in the Chablis region as the climate is relatively inhospitable and extreme diligence is necessary. Organic certification by Ecocert was achieved in 2009 Pattes Loup means "wolfâs paws". The name refers to the name of a plot of Village level Chablis owned by the domaine.
