(kowel-EEL-ah) In Gaelic Caol Ila means âSound of Islayâ. Hector Henderson founded the distillery in 1846 near Port Askaig in a remote cove on Islay. The water that the distillery uses is from Loch nam Ban (Torrabolls Loch). Caol Ila is the "workhorse of Islay". Â It is by far the largest distillery on the island and the vast majority of its output is used in blending, particularly in Johnnie Walker and Bellâs. Â However Diageo now promotes Caol Ila as a standalone single malt with Special Release bottlings (including unpeated versions). Â There is also a wide range of bottles available from independent bottlers.
